A limited production wine, made exclusively from the native grape of the area: Monastrell. It is a clear commitment to get the most out of the terroir of the municipality of Pinoso and its surroundings. The grapes come from our selection of dry-land vineyards that are more than 45 years old, cared for throughout the year with the most rigorous care and following the regulations of organic farming. The yields per vine are very low, achieving grapes of enormous complexity and very concentrated. Traditional vinification, with controlled fermentation in stainless steel tanks at 28 - 30ºC with constant pumping over and a prolonged post-fermentation maceration, to achieve the maximum expression of each grape. Its long stay in new oak barrels for 9-12 months and subsequent rest in the bottle, have achieved a harmonious evolution of this highly expressive wine.
