Diapiro White Wine Bottle 0.75 L

With Diapiro Blanco, the winery's intention has been to rescue a peculiar variety that was traditionally grown in our fields, such as Merseguera. For the technical team, a dream has been fulfilled, which has been sought for some years. For this project we have relied on bush-shaped vines, located on limestone soils and situated at an altitude of more than 650 metres. Vineyards with controlled yields and dry land, barely supported by some irrigation in the hottest months of summer. The climate that surrounds the vineyards is continental Mediterranean, with dry winters, generally cold springs, and very warm summers where cool nights predominate, thus obtaining grapes with a good level of sugar and a good concentration of acids and aromas. After carrying out the manual harvest during the first hours of the day, we apply a gentle destemming and crushing. We macerate the must with the skins, cold at 8ºC, for about 6-8 hours. Part of this must is fermented in stainless steel tanks at 14ºC on fine lees. The other part is fermented in new French oak barrels, with a light ageing on lees for 2 months, and with battonage twice a week, protecting the aromas and achieving a much more balanced and harmonious wine.
