Diapiro represents the good work of the people of Pinoso, concentrating all the winemaking tradition of their town. The fusion of the old Monastrell vineyards located on the slopes of the Cabezo de la Sal mountain and with low production, combined with the fresh fruit of the Tempranillo and the concentration of the Merlot from our area, make up a totally balanced wine that transmits an infinite number of sensations. A rigorous selection of our best grapes harvested by hand, fermented in stainless steel tanks at 24ºC give shape to this exceptional wine. During the cold winter, the wine rests in almost century-old concrete tanks, where it rounds out and matures. Finally, a short aging of 4 months in new French oak barrels, provides pleasant notes of roasted coffee and cocoa, putting the finishing touch to a luxurious composition. A complex and elegant wine in memory of the winegrowers from whom we inherited the passion for our land.
