A special organic wine with great personality thanks to the queen of our vineyards, the Monastrell variety. The grapes are expressly and carefully selected for the production of this wine, they come from old vineyards in medium/high areas (500-700 m) and low production. In this way we obtain grapes with great organoleptic complexity and very concentrated. The maceration after destemming is carried out in stainless steel tanks for 25 days at a controlled temperature and with continuous pumping over. All the power of the variety is intensified by aging it for 6-12 months in oak barrels (50% American and 50% French), where the wine is brought to a balance in its notes and flavors, to finish with aging in the bottle for another 12-18 months.
